Above: this 12 minute video shows many brief glimpses of Fair attractions. And it's the Minnesota State Fair that you're seeing. It talks about cheese curds, but I recommend you take the time to watch the video to get a sense of the Fair. The cooking lesson, while well-intentioned, misses the point for me because I'm not interested in a "healthier" version of fried Cheese Curds. If you are impatient you can skip to about 7:50 and see the Cheese Curds booth in the Food Building at the Fair—where I recommend you go for all your Cheese Curd needs. This morning's post, Minnesota State Fair Prep—#5: Fair Food Made Simple (And Some Thoughts on Exercise), raised a lot of questions. I addressed some of these with an EXTRA post about Salt Water Taffy. Now I feel compelled to address Cheese Curds too. The above video not only shows you how these are made at the Fair (at minute 7:50 or so), but throughout it shows you some nice clips of Fair attractions. You can feel the August heat and humidity and get a sense of the crowds. Stick with it and you'll be rewarded by a lovely sheep encounter.
I almost forgot to mention: in the attractions you'll see Lillian Colton, Crop Artist extraordinare (who has since passed away) posing with a book about her art; see the butter portraits of the Fair Princesses (read about the program here); people selling all sorts of things; other people playing games of chance on the Midway; sword swallowing—just watch it OK?
